The cooking style involves tradition and creativity. Among proposed dishes: egg with bisque of Sanremo prawns cooked with royal crispy ovules; tajarin (fresh pasta prepared with 30 egg yolks using a rolling pin) with Alba white truffle; medium-cooked sirloin steak with Nebbiolo grape must with Scalogno mousse.
