The restaurant Del Cambio was inaugurated in 1757 and it offers intense and delicate flavours reminding of the old Piedmont, combining tradition and creativity. In the larger room is kept a table where the Count Camillo Benso di Cavour, who was one of its most regular customers, used to sit. The historic restaurant was indeed a meeting place for the most important politicians, aristocrats, and Subalpine and Kingdom cultural figures. The irresistible charm of the setting — rich in velvet, crystal and antique furnishings — is matched by a culinary offering that reinterprets the region’s heritage through a long-standing dialogue with French culture, drawing inspiration from the seminal eighteenth-century Piedmontese cookbooks. A journey that celebrates seasonality, memory and raw ingredients, transforming tradition into an experience that is cultured, restrained and thoroughly contemporary. Completing the experience is a remarkably extensive wine cellar, among the oldest in the city, housing thousands of bottles and labels selected from both renowned estates and niche producers.
