Finely chop the bacon fat with a knife and melt in a pan with the butter. Add the leeks cut into very thin rounds and stew slowly, covering the pan with a lid, without browning them. Separately, boil the potatoes in their skins, then peel them while they are still hot and mash them using a potato ricer.

Add them to the stewed leeks, add the Toma cut into small cubes or thin slices and stir, seasoning with salt and pepper. Remove from the heat and leave to rest for a few minutes so that the cheese melts.
