Ingredients

beef or vegetable broth
600 gr
wild spinach
to taste
butter

extra virgin olive oil

potatoes
250 gr
rice
to taste
salt

Thoroughly wash the bruchiei (wild spinach, or Good King Henry) and dry the leaves on a linen cloth. Gently fry the finely sliced onion in extra-virgin olive oil until it turns clear and then add the spinach, roughly chopped. Release the flavours with cooking, add salt and cover with the broth. Peel the potatoes and dice them, adding them to the pan with the other ingredients. Cook over a medium heat for 20 minutes or so, adding the rice and, if necessary, some more broth. When done, check the amount of salt, add a knob of butter and serve.
