Pears cooked in Barolo are a Piedmontese speciality. This delicious dessert is ideal for those who want to avoid eating too many fatty foods over Christmas time.

Wash the unpeeled pears very well and leave them whole; then arrange them so that they stand upright in the pot with the stalk on top. Pour over enough wine to cover the fruit, sprinkle with sugar, add the cloves, put the lid on the pot and leave the pears to cook for about an hour at very low heat.

When cooked, use a spoon to remove the pears from the pot and put them on a plate; then reduce the wine over a high heat, rearrange the pears in the pot and leave them to cool.

Pears with Barolo are served cold in bowls, sprinkled with a plenty of the wine used to cook them.
