Ingredients

egg whites
800 gr
wheat flour

milk

cream
3 pinches
caster sugar

Pour the milk and cream into a bowl; add the sieved flour, sugar and raw egg white. Mix well to eliminate any lumps.

When the batter has an even consistency, leave it to rest for about twenty minutes, allowing the ingredients to bind well together and the batter to reach the right density.
If you don't have a special cast iron pan for cooking miaccia, you can use a standard non-stick pan. Place it on a moderate heat and, when warm, pour out a very thin layer of batter, so that it remains crisp as it cooks. Shake the pan every now and then so that it doesn’t stick, cooking until golden on both sides.
When cooked, spread with butter and sugar or fill with jam or chocolate spread.
