CHUB FISH

Ingredients

1 a pat
butter
2 of 700 gr each
chub
2 handful
wheat flour
2 spoons
extra virgin olive oil
1 glass
dry white wine
to taste
pepper
to taste
salt

Clean the chub and filet the flesh. Coat the filets in flour and fry them in butter and oil in a pan until they turn golden brown on both sides. Add salt and pepper to taste, pour in the wine and simmer as it reduces, then cook for approximately ten minutes in a preheated oven at 180°C.

Serve with a side helping of potatoes, steamed and then sautéed in butter and wild thyme. Accompany the dish with the same wine used to cook the fish.
