Milk from alpine pastures is a world apart from that produced in barns: the secret lies in the fragrant, wild mountain herbs that give alpine products their unmistakable character. The event ‘All the Senses of Taste: Smell’ dedicates a whole day to discovering and gathering edible herbs on Alpe Sagnetta, in the heart of the upper Val Germanasca, one of Piedmont’s Occitan valleys that remains unspoilt and largely untouched by mass tourism. From Borgata Fontane, the group will climb up to the pass of the same name together with herbalist Silvia Maria Nepote Fus, on a walk suitable for everyone through meadows and pastures: along the way, you’ll learn to recognise, gather and use wild edible herbs, guided not only by your eyes but also by the scents. Awaiting participants at the summit is a picnic featuring artisanal cured meats and other valley delicacies, to be enjoyed whilst admiring a panorama of peaks stretching as far as the eye can see. In the afternoon, the focus will be on the aromas of butter and cheese. At the mountain pasture, participants will discover how Dahu cheese—with its characteristic oblique shape—is made, and will be able to taste it under the guidance of ONAF delegate Sara Valentino.
