The restaurant is housed in a wing of the ancient castello di Rivoli (UNESCO World Heritage) and represents one of the most interesting and complete workshops for haute cuisine in Italy. Chef Davide Scabin’s dishes are intentionally minimalist, because perfection is the chef’s aspiration. His recipes are very personal and very difficult to reproduce. There are two menus available: the “Combal” menu and the tasting menu “Punto zero”, containing very special dishes. Among the specialities the kidney in gin, mint and lime oysters, Thailandese scallops, pork shin with coconut and asparagus, ravioli shake and rose jam are worthy of mention. The wine list is very extensive.
